WHAT IS 'SOUS VIDE' COOKING TECHNIQUE?

‘SOUS VIDE’ refers to the low temperature vacuum in French.
This is a new cooking technique that entails cooking at vacuum state at a temperature that is lower than that of the traditional cooking temperature (100℃). It requires a cooking process which entails placing in the vacuum packaged food ingredients in the constant-temperature water bath that maintains the accurate temperature.
It is possible to create differentiated new taste and mouth feel, impossible to create with traditional cooking method, through this process!

HOW TO USE SOUS VIDE MACHINE?

SOUS VIDE recipe normally undergoes the following process. For details, try to follow instructions on the cooking VOD. Enjoy high end food of the quality restaurant caliber at home as well!

1. Use SOUS VIDE machine to set up the pot (water bath)’s water temperature
2. Food seasoning and vacuum packaging using vacuum packaging machine
3. Input the vacuum packaging bag into the pot (water bath) when the temperature reaches the set temperature
4. Set up cooking time
5. Shearing after taking out the vacuum packaging pack after the set time lapses by
6. Plating
